Job DescriptionSUMMARY:Operates flake drum applicators in such a
way as to produce the maximum amount of quality A-grade flake in
accordance with customers specifications. Maintains work area
around the flake drum applicators clean and sanitized. Ensures area
is free of waste, debris and relieves other Drum Operators for
breaks. Act always in such a manner as to comply with good
manufacturing practices, food safety, and food quality including:
Proper dress code, personal cleanliness, neatness and follow proper
sanitation procedures. Follow all safety rules and procedures.
Report all food safety, food quality, unsanitary and unsafe
conditions to the Head Drum Operator or Shift Foreman
immediately.
ESSENTIAL DUTIES AND RESPONSIBILITIES: Include the following, other
duties may be assigned. On the job training available.
- Must arrive on time ready and able to work
- Must wear and maintain all required PPE, replace as
needed.
- Understands the functions of the electrical switches of the
flake drum applicators and the safe operations of the
machines.
- Thoroughly understands and able to identify Lock out/ Tag out
power isolation devices (only licensed electricians and apprentices
may open electrical boxes or switches at any time).
- Trained and authorized to perform Lock out/ Tag out in
compliance with OSHA standards.
- Maintains clean floors by picking up flake and disposing in
dumpster.
- Clean and sanitize floor once per shift.
- Communicates with the oncoming operators as to the condition of
the flake drum applicators.
- Maintains post at flake drum applicators until properly
relieved.
- Ensures flake drum applicators are properly adjusted.
Immediately contact the Head Drum Operator if there is a break in
product coming from the laterals.
- Maintains even flow and consistency of mash on flake drum
applicators and keeps mash trays clear.
- Maintains water control.
- Checks defect count and clear any area that may be producing
high defects such as; bull hide, scorch, and/or shell.
- Checks and maintains conditions around the flake drum
applicators every fifteen minutes, including the sides and wires
and ensure minimum amount of waste.
- Removes bull hide, scorched, and or shell as needed.
- Keeps water use down to a minimum.
- Observes area floor for slick spots and cleans as needed.
- Places all wet mash in the waste mash pump auger bin.
- Assures that all equipment is clean, sanitized and in proper
place when not in use.
- Ensures no foreign material gets into the product while
cleaning and/or sanitizing work area.
- Immediately notifies the Head Drum Operator if any foreign
materials fall in the flake drum applicators, so the machine can be
shut off, and contaminated product can be isolated quickly.
- Change and sanitize shovel tanks every two hours or as
needed.
- Assists in any area as needed or assigned.
- Advises Head Drum Operator as to any problems.
- Sanitizes and store cleaning tools properly.
- Sanitizes work area with chlorine spray, such as side boards,
hood, and back board as needed or directed to keep bacterial levels
at a minimum.
- Observes waste pump for plugs and/or mechanical problems.
Reports any problems to the Head Drum Operator or Foreman
immediately.
- Assists as needed with changing flake drum applicators
knives.
- Thoroughly understands and able to follow safety and standard
operating procedures to be used working, operating, and cleaning
the machinery.KNOWLEDGE AND SKILLS:
- Ability to read and interpret documents such as safety rules,
operating and maintenance instructions, and procedure manuals.
- Able to add, subtract, multiply, and divide in all units of
measure, using whole numbers, common fractions, and decimals.
- Able to compute rate, ratio, and percentage.PHYSICAL DEMANDS:
- While performing the duties of this job, the employee is
regularly required to stand; walk; use hands to finger, handle, or
feel; reach with hands and arms; climb or balance; and stoop,
kneel, crouch, or crawl.
- The employee frequently is required to walk, climb, or balance,
stoop, kneel, crouch, or crawl, and talk or hear.
- The employee must regularly lift and/or move up to 25 pounds
and frequently lift and/or move up to 100 pounds.
- Specific vision abilities required by this job include close
vision, distance vision, color vision, peripheral vision, depth
perception, and ability to adjust focus.
- WORK ENVIRONMENT:
- While performing the duties of this job, the employee is
regularly exposed to wet and/or humid conditions, moving mechanical
parts, extreme heat, and vibration.
- The employee is occasionally exposed to high, precarious
places.
- The employee is occasionally exposed to outside weather
conditions, extreme cold and risk of electrical shock.
- The noise level in the work environment is usually very
loud.Permanent, year-round position.
